Analisis Usaha dan Pengembangan Agroindustri Keripik Pisang "Dapur Bunda" di Desa Makmur Kecamatan Pangkalan Kerinci Kabupaten Pelalawan Provinsi Riau
Processing bananas into banana chips is one way to increase the selling price and extend the shelf life of the product. The increase in raw material prices and supporting prices, the ability of human resources in the use of technology and sales of products that are still around Pangkalan Kerinci are the obstacles faced. This study aims to analyze: (1) how the characteristics of entrepreneurs and business profile of banana chips Dapur Bunda in Desa Makmur Kecamatan Pangkalan Kerinci (2) how the processing of banana chips (3) how the use of production factors, production costs, production, revenue, efficiency and added value in the banana chips agroindustry (4) how the banana chips business development strategy. The study was carried out by the survey method. The location of this study was chosen intentionally (purposive) located in Makmur Village, Pangkalan Kerinci subdistrict, Pelalawan regency. The respondents were taken by census, consisting of 1 entrepreneur, 2 workers. The Data used are sourced from primary and secondary data. Data analysts used consist of qualitative, quantitative and Hayami descriptive analysis, as well as SWOT analysis. The results showed that (1) the average age of entrepreneurs and their workforce is 42.33, the entrepreneur's education is 9 years, business experience is 8 years and the number of dependents of the entrepreneur's family is 2 people. (2) the processing of banana chips is peeling, washing, slicing, mixing banana slices with rice flour dough, frying, draining, cooling and packaging. (3) Total production cost for banana chips business is Rp. 843,449,63 with an average use of banana raw materials 125 kg / production process, with a total production of 27.5 kg/production process. Gross income of Rp. 1,925,000 / production process and net income of Rp. 1,070,583,37 / production process. RCR Agroindustrial banana chips amounted to 2.25. (4) the results of SWOT analysis show that the business is in the first quotient of so (strengths and Opportunities) strategy to be able to maintain product quality and increase production and expand marketing areas. By considering alternative strategies obtained from the results of this analysis can be used for business development.
