Agroindustri Usaha Pisang Goreng Kipas Kuantan II (Pendekatan Haccp) di Kota Pekanbaru Provinsi Riau
Banana fruit has the property of being easily damaged so that its durability is very limited. This is done by processing bananas into fan fried bananas for additional income by entrepreneurs is one of the most promising businesses in Pekanbaru City.The purpose of this study is to analyze: (1)characteristics of entrepreneurs and business profiles of the fan banana agro-industry business; (2) availability of raw materials, use of supporting materials, processing technology, use of labor and production processes; (3) production costs, income, profits, BEP profits, efficiency, added value and HACCP of the agro-industry business of Kuantan Fan Fried Banana II.The research method used is a survey. Respondents in this study were 1 business owner and 31 employees of the Banana Fan Kuantan II agro-industry. This research was analyzed by descriptive qualitative and quantitative. The results show that the age of the entrepreneur is 51 years, the average age of employees is 24 years, length of education for entrepreneurs is 12 years, length of education for employees is 9 years and 12 years,the number of dependents of the entrepreneur's family is 2 people and the average number of dependents of the employees' families is 2 people.The main raw materials for the fan fried banana agro-industry are kapok bananas, with supporting ingredients cooking oil, wheat flour, sweet potato flour, salt and whiting, processing technology using semi-mechanical, the use of labor as many as 32 people with 1 owner .The production cost of the banana fan kuantan II agro-industry is Rp. 9,542,934/production process, gross income earned Rp 11.949.999 and profits of Rp 1.192.000, The BEP obtained was IDR 1,205,156.8 and RCR value of 1,11. Hazard analysis on the main and supporting raw materials has the possibility of danger in physical form, for example there are foreign objects in the raw materials, as well as the presence of contamination during the distribution of raw materials. Control measures carried out by inspecting raw materials from suppliers by washing raw materials. The danger when making banana fan is contamination from humans and the environment such as dust and hair.Production processes with low hazard are stripping, cutting and pressing processes.Production process with moderate hazard on the physical condition of cutting, frying and draining oil.Preventive measures are taken by ensuring the processing of fan fried bananas is clean.
