The large number of banana production in Tenaya Raya District so that there is a need for processed products based on banana agroindustry, namely fan bananas. aims to analyze: production technology and production processes, production, production costs, revenues, efficiency and added value. The method used in this research is a case study method in Sialang Sakti Village, Tenayan Raya District, Pekanbaru City, namely the Sumatran fan banana business. The form of business is classified as a small business, the capital is entirely sourced from personal capital, which is IDR 100,000,000. The total use of labor is 11 people. The average use of raw materials is 154 kg/production process. The use of supporting materials is Rp. 1,185,000 /production process. The use of labor is 3.65 HOK/production process. While the technology used in the fan fried banana agroindustry uses simple technology. The total cost of production is Rp. 1,671,415/production process. The products produced are 93 kg or 945 fan bananas with 2600 grade a, 280 grade b and 399 grade c. Selling price 32,000/kg. The selling price of grade A is Rp. 4,500, grade b Rp. 3,500 and grade c Rp. 2.500/piece. Gross income of Rp. 3,174,500 /production process and net income of Rp. 1,304,585 /production process. Efficiency (RCR) is 2.25. Total value added is Rp. 8.903 /kg with a value added ratio of 19.14%. The added value ratio of 46.07% means that every Rp. 100 of the banana fan value contains an added value of Rp. 46.07,-.
