Optimalisasi Usaha Argoindustri Roti di Kota Pekanbaru (Studi Kasus: Rottte Bakery Jalan Bukit Barisan)

The bread business is a business that has economic value and is quite high in demand. This business must be encouraged by increasing production, one of which is by optimizing bread production in order to obtain maximum profits. This research aims to analyze: (1) Business characteristics (including age, length of education, business experience, and number of family dependents) and business profile (business history, business scale and business capital) (2) Analysis of the Rotte Bakery agro-industry business (includes costs Production, Production, Income, Efficiency and Profit). (3) Allocation of resources (raw materials, labor and machine tools (4) Combination of bread production using the POM-QM for WINDOWS application. This research was conducted at the bakery on Jalan Bukit Barisan, Pekanbaru City from January to June 2023. The method used in This research is a case study method. The selection of respondents was carried out through direct interviews with rotte bakery business actors. Analysis results show: (1) Characteristics of entrepreneurs and workers at Jalan Bukit Barisan, Pekanbaru City. 49 years and the average age of workers is 24 years, education is classified as high with the length of education of entrepreneurs being 17 years and the average education of workers is 13 years, in terms of business experience the entrepreneurs and workers are classified as experienced, namely 16 years and 2 years, respectively. then have dependents from the entrepreneur's family, namely 5 people. The bakery agro-industry business profile is included in the small-scale business and the business capital is 500 to 600 million (2). The total production costs in the bread agro-industry at Rotte Bakery are IDR 200,194,543. The resulting production was 41,786 pcs with an average price of IDR 7000/pcs. Gross income per production process is IDR 292,502,000/month and net income is IDR 92,307,457/month. Efficiency in rotary bakery (RCR) is 1.46, which means it is feasible to develop (3) Allocation for the use of raw materials is 12.96 kg per day, labor hours are 8.91 hours per day and machine hours are 11.74 hours per day (4) Production combination to obtain maximum profits business actors must produce at optimal levels, namely 10.4 kg (173 pcs) production for donuts, 11.26 kg (188 pcs) production for fit-o, 7.44 kg (44 pcs) production for sweet, 13.44 kg (79 pcs) production for pillow, 20.16 kg (45 pcs) production for plain and 12.3 kg (27 pcs) production for wheat. So, the profit that will be obtained from the bread business is IDR 790,435.5 per day.
